Actually, that song is one of the few Medieval songs still sung regularly. It has about 800 years of history behind it. To have survived that long, it must strike the right chords in a lot of people.
My fave version is the symphonic one, by Franck Pourcel. They play the intro with several flutes, the strophe with a harpsichord, and the violins are used to mark the refrain. Lovely.
